Breakfast in Bed

I don’t know about you, but breakfast is bed is a weekend must in my house. One of Kirk and my favorite things is a simple cheese omelet.

It’s super easy to put together and comes out light and fluffy every time! Here’s how to do it:

2 eggs

1/4 cup of milk (I use whole milk for cooking)

salt and pepper to taste

1/4 cup of your favorite cheese

2 tablespoons of butter

Crack the eggs into a bowl and break the yolks. Add the milk, salt and pepper and whisk until the yolks are combined into the whites and milk. The whisking is what makes the eggs fluffy!

Melt the butter over medium heat until melted. Add the egg mixture.

Let the egg mixture sit and firm up. You will be able to see the eggs rise. When the edges look set, use your spatula to loosen the edges away from the pan.

Sprinkle your favorite cheese across the top, fold over one side and cook another two minutes or so until the cheese is melted and the eggs are cooked through.

You could add a sprinkle of cheese to the top if you want!
