Greek Salad

Greek salad is something that I absolutely love. The salty feta with the briny olives has always appealed to me. This salad brings the feel of summer – even when it’s not.

Greek Salad

Ingredients:

4 vine ripened or roma tomatoes, chopped

½ “seedless” cucumber, chopped

½ small red onion, sliced

1 small brick of Feta cheese (6 oz)

½ cup kalamata olives, chopped

2 teaspoons dried oregano

¼ cup of olive oil

1 tablespoon red wine vinegar

Chop the tomatoes and cucumbers. Crumble the feta cheese. Sprinkle the oregano over the vegetables and cheese. Sprinkle the red wine vinegar over everything then drizzle the oil over everything. Can be served cold or at room temperature.

  • If you like greens in your salad, place the above recipe on top of a bag of pre-washed arugula or 50/50 mix.
  • This is delicious served with grilled chicken!
