Slow Cooker pork & sauerkraut

Growing up in a Pennsylvania Dutch area, we always had this dish for New Years. I love it so much I have it every other month or so. It’s a family and friend favorite, and I’m asked to make it a lot! It’s easy; the crock pot does the work!

Slow Cooker Pork & Sauerkraut

1 lb of pork (loin chop, tenderloin, soup chunks, it doesn’t matter)

1 bag of sauerkraut (if you can come up with a jar of homemade, even better!)

¼ of a bottle of lager beer

1 clove of garlic

Pinch of pepper

Add the pork to your slow cooker.

Drain most of the liquid from the sauerkraut.  Add over the pork.

Add the lager beer and cover the top with plastic wrap so you can drink it with supper.

Add the garlic clove and a sprinkle of pepper.

Cook on low in the slow cooker for 8 hours. The pork will be super tender and the sauerkraut will have turned a brownish color.

Serve with mashed potatoes.

  • The beer absorbs some of the brininess from the sauerkraut.
  • Some folks serve applesauce with this, I prefer to serve cranberry sauce.
