Homemade Egg Noodles

I come from a large, low income family. When I was young, many years before chicken wings became bar food and got to be what they are today, they were the cheapest chicken you could get. My Mum would make these homemade noodles and serve them with mashed potatoes and chicken wings that she coated in flour and fried up in crisco in her cast iron skillet. I was feeling nostalgic and decided to have this meal with Kirk the other day.

These are easy to do, I hope you try them. Have them as a side or turn them into soup.

Sides: Egg Noodles

Ingredients:

½  cup of all-purpose flour

1 large egg

2 teaspoons of milk

Salt and pepper to taste.

Place the flour on a large cutting board. Add a pinch of salt and pepper and mix. Make a well in the center of the flour. Crack the egg into the well and begin mixing in the egg by dropping flour in from the edges of the well. Add the milk until the mixture is well combined into a dough. Roll out desired thickness. Let dry for two hours. Cut into strips and cook.

  • I usually cook these in 2 cups of boiling chicken stock
  • Turn this into soup by adding cubed chicken, and diced carrots & celery!
