Stuffed Green Peppers
My Mother had a unique way of cooking her stuffed peppers, which is to boil them. They always remind me of her and I am happy to share this with you.
Ingredients:
4 medium green bell peppers
1 lb ground beef
1 small onion
1 clove of garlic
¼ cup uncooked white rice
1 8oz. can of tomato sauce (I prefer Hunt’s)
Salt & pepper to taste
Grate the onion and garlic into the ground beef. Add salt and pepper to taste. Mix with your hands until combined.
Cut the tops off of the peppers and remove the seeds and ribs.
Divide the meat mixture evenly among the four peppers. Sprinkle the top of the meat with uncooked rice and place the tops back on the peppers.
Place the peppers into a pot. Fill the pot with water halfway up the peppers. Simmer on medium heat for 35 – 40 minutes or until the meat is cooked through.
Carefully drain most of the water out of the pan (leave about an inch of water) and add the tomato sauce. Simmer another 15 minutes on low heat.
I usually serve with mashed potatoes.
