Homemade Hamburger Helper Beef Stroganoff

I’m not ashamed to admit that I love hamburger helper. It’s a quick one pot meal that satisfies. But, you never really know what is in it.

I found a recipe for homemade beef stroganoff that is delicious and just as easy as opening that box of hamburger helper. The best news? You know exactly what you’re putting in the pan, unlike what you are shaking out of a seasoning packet.

Homemade “Hamburger Helper” Beef Stroganoff

½ teaspoon of olive oil

1 teaspoon of butter

4 ounces sliced mushrooms of your choice

¼ of an onion, diced

½ lb ground beef

1 tablespoon garlic powder

1 ½ tablespoons of flour

½ teaspoon paprika

2 cups of beef broth

¾ teaspoon salt

¼ teaspoon pepper

2 cups dry egg noodles

¼ cup sour cream

1 tablespoon fresh parsley

1/8 cup dry sherry (optional)

Put olive oil and butter into a skillet heated to medium. Add the mushrooms and cook until they are browned and have given off their juices then remove to a plate. You’ll add them in at the end.

Brown and crumble the ground beef for a few minutes then add the onion and garlic powder. Stir to combine. When the onions are soft and the beef is cooked through, drain any excess fat from the skillet.

Stir in the flour and paprika to coat the beef. If you’re using sherry, add to the pan and scrape up any brown bits off the bottom of the pan and cook until the sherry evaporates.

Add the beef broth, salt and pepper and bring to a boil. You’ll notice the sauce thickening slightly because of the flour. That’s ok.

Stir in the egg noodles, reduce the heat to a simmer and cover. Stir every few minutes. Once the noodles are tender, stir in the sour cream and mushrooms.

Sprinkle with the parsley.

  • You could totally add frozen peas to this!
