I love corned beef and cabbage, but as you probably guessed by now, I’m a pretty lazy cook. I’ve come up with a super easy corned beef and cabbage soup that is done in about 30 minutes! Enjoy!
Corned Beef & Cabbage Soup
2 medium Yukon gold potatoes, cubed
¼ head of cabbage, sliced
1 12oz can of corned beef, cubed
1 cup carrots, sliced
1 14.5 oz can of chicken stock
3 cups of water
1 teaspoon salt
½ teaspoon pepper
Add the potatoes, carrots and cabbage to your soup pot and add the chicken stock, water, salt and pepper. When this comes to a boil, add the canned corned beef. When the potatoes are fork tender the soup is done.
