This comforting dessert is easy to make, but your friends don’t have to know that! Impress your guests or just cuddle in on your own with this classic!
Blueberry & Raspberry Cobbler
Filling:
1 ½ cups blue berries
1 ½ cups raspberries
3 tablespoons sugar
½ teaspoon vanilla extract
¼ teaspoon baking powder
Topping:
2/3 cup flour
1 pinch of salt
1/3 cup softened butter
½ cup sugar
1 egg
Pre-Heat oven to 375
In an 8 inch baking dish mix blueberries, raspberries, 3 tablespoons of sugar and vanilla extract and combine. Set aside.
In a medium bowl, cream egg, salt and ½ cup sugar until well combined and frothy. Add flour gradually until combined. Cut in the butter with a fork until the mixture is incorporated. Drop onto the berry mixture and try to cover as much of the filling as possible.
Bake in the pre-heated 375 degree oven for 35-40 minutes until the berries are bubbling and the top is golden brown.
I served this topped with vanilla ice cream.
- Using frozen berries is less expensive than using fresh ones, but you should thaw them and drain them of the excess juice, otherwise you have a runny cobbler!
- Save those juices – reduce it in a small saucepan and spoon over icecream!
