Blueberry & Raspberry Cobbler

This comforting dessert is easy to make, but your friends don’t have to know that! Impress your guests or just cuddle in on your own with this classic!

Blueberry & Raspberry Cobbler

Filling:

1 ½ cups blue berries

1 ½ cups raspberries

3 tablespoons sugar

½ teaspoon vanilla extract

¼ teaspoon baking powder

Topping:

2/3 cup flour

1 pinch of salt

1/3 cup softened butter

½ cup sugar

1 egg

Pre-Heat oven to 375

In an 8 inch baking dish mix blueberries, raspberries, 3 tablespoons of sugar and vanilla extract and combine. Set aside.

In a medium bowl, cream egg, salt and ½ cup sugar until well combined and frothy. Add flour gradually until combined. Cut in the butter with a fork until the mixture is incorporated. Drop onto the berry mixture and try to cover as much of the filling as possible.

Bake in the pre-heated 375 degree oven for 35-40 minutes until the berries are bubbling and the top is golden brown.

I served this topped with vanilla ice cream.

  • Using frozen berries is less expensive than using fresh ones, but you should thaw them and drain them of the excess juice, otherwise you have a runny cobbler!
    • Save those juices – reduce it in a small saucepan and spoon over icecream!
