As you may have guessed, I love comfort food. There is nothing more comforting than meatloaf and mashed potatoes. Blue Plate Special, anyone?
Mini-Loaf Pan Meatloaf
Pre-Heat the oven to 350.
Meatloaf:
1 lb of ground beef
2/4 cup of minced yellow onion
½ cup minced celery
2 eggs
¼ cup soy sauce
1 teaspoon dried oregano
1 tablespoon dried parsley
2 teaspoons garlic powder
Black pepper to taste
1 cup quick oats
Mix all the meatloaf ingredients together and place into loaf pans (I get 3 mini-loafs with this recipe, one for now and two for later).
Brush on the topping and bake for about an hour, the temperature should be about 160.
Topping:
¼ cup lightbrown sugar
¼ ketchup
3 tablespoons yellow mustard
½ teaspoon paprika
½ teaspoon pepper

Brush on the topping and bake for about an hour, the temperature should be about 160.
- You can buy meatloaf mix at the market. It’s usually equal parts of ground beef, pork and veal. I just used ground beef.
- I buy 5 packs of mini loaf pans at my local dollar store. I also make lasagna in the mini-loaf form.
- The topping seems sweet to some folks, you can back it off touch by reducing the brown sugar to 3 tablespoons.
